Double Happy Bak Kut Teh at Zion Road

Recommended by Johor Kaki; a really old school stall. The soup was gentle, lightly porky and just slightly peppery, garlicky and sweet, with fresh and moderately tender pork. This was unlike the usually very peppery bak kut teh, and tasted a bit more like savoury tea, a literal bak kut teh. Interesting and comforting stuff.

A good old-timer stall recommended by Miss Tam Chiak. I thought this was a very nice bak kut teh, with fresh and flavourful meat that had a pork fragrance without the unpleasant porkiness. The soup had a good meaty flavour, with a balanced taste profile featuring heat from the pepper, and fragrance from the garlic etc. Nice.

Leong Kee (Klang) Bak Kut Teh at Geylang

很够味. The bak kut teh was all herbally, layered in flavours, and strong. Quite an authentic Klang style black bak kut teh. The pork ribs were tender and slightly fatty, and the tau kee and tau pok soaked up the broth very nicely. One of the best Malaysian-style bak kut teh here. A slightly long wait though – 20 to 30 minutes after being seated.

Feng Xiang Authentic Klang Bak Kut Teh – Mee Sua & Fried Porridge at Beauty World

The fried porridge had a very good wok hei, and was flavourful and very similar to Old World at Yishun. The pork and soy sauce flavours permeated the porridge, and the pig innards were fresh and done well. Nice.
I had gone back again for the bak kut teh and mee sua on 9 Nov. The soup was very nice and herbal, and the pork was tender. The mee sua was moist, savoury and fragrant with pork lard oil, although just slightly less fragrant than Old World. The SethLui.com reviewer oddly panned the stall, although Seth seemed to have personally added an afternote commending its flavours.

The queue was seriously long, about thirty minutes long, mainly because they took and prepared each order sequentially and individually.
The pork liver and bak kut teh soup was nothing to write home about. But the other two were the bomb. The fried dry mee sua was really stir-fried bee hoon, and was tossed in a seriously fragrant and umami fried pork lard oil, soya sauce and oyster sauce. This gave the bee hoon an oily slickness, and a savouriness and fragrance like no other.
The mixed pig’s organ fried porridge was very nice. It had a solid chao ta smokiness, savouriness from the dark soy sauce and other condiments, and a complexity from the bak kut teh stock and various pork parts. The pork parts were fresh, springy and tasty too, and the fried shallots and spring onions added texture and fragrance. Worthy of the queue.

Malu Malu Wah Seng Bak Kut Noodle at Marsiling

Something new and interesting, recommended by Denise Tan of Gold 905. The wait was quite long for something so far out in an industrial Woodlands factory building on a Sunday.
The noodles were really nice and comforting, bathed in a tasty ketchup-sweet vinegar sauce (which was probably enhanced by the bak kut teh stock), and sprinkled with fresh, fragrant and crispy fried shallots and pork lard.
The pork was fall off the bones tender and fresh, the bones in this case being soft white bones. The tau kee was crispy and fragrant too, while the tau pok was standard. The soup was oddly subtle though, slightly sweet and a bit bland, and I thought not savoury or herbal enough.

The bak kut teh was very peppery and porky, but didn’t seem to have any additional layers of fragrance. The mui cai was not bad, but couldn’t save the soup. I think this had been featured variously due to their old-school taste, which I didn’t appreciate.
