虾的传人 Prawnography By Bao Er – Hokkien Noodles at Thomson Road Novena

Recommended by ieatishootipost. The plate was a bit more watery and wetter than I liked, but full of smokiness, wok hei and umami. The prawn stock was really quite flavourful, while the crackling was crispy and flavourful too. The noodles were of just the right texture, with a bit of bite. Nice.

Jew Kit – Hokkien Mee at Killiney Road Orchard

Jew Kit is more known for their chicken rice. But their Hokkien Mee recommended by SethLui.com was really not bad. This was the wet type with just a hint of wok hei, but the broth was really full of thick savoury seafood and prawn flavour, which was nicely soaked up by the springy noodles and bee hoon. The eggy fragrance was also prominent, and the sotong (squid) and prawns and fresh and bouncy, although lacking sweetness.

Recommended by 8 Days and Eatbook.sg, opened by some of those behind Soi 19 Thai Wanton Mee. The KL Dai Lok Mee is a signature here, given the head chef once opened a KL Hokkien Mee stall. The version here, lashed with sticky dark soy sauce, came with two prawns, fish cakes and bits of pork belly and cabbage. It had a strong but balanced savoury sweet flavour, moderate wok hei (very decent for a cafe) and had a good amount of crispy and fragrant lard and garlic. The chilli is really sour and spicy and “got kick”. Really nice. This dish is really compatible with Singaporean’s preference for sweetness in our dishes (although not as much as KL).

Fried Hokkien Prawn Mee at Jurong West Avenue 5

Recommended by SG Food on Foot, and located at a standalone food court at the old Jalan Bahar Camp. This was the watery type of Hokkien Mee, but very flavourful and with a good wok hei. You could taste the sweetness of the prawn and the smokiness of the wok hei in the gravy, and the the noodles were quite al dente. The sio bak was salty and not so tender though, and you could taste just a tinge of the alkaline from the noodles. Overall an above average Hokkien Mee.

Singapore Fried Hokkien Mee at Whampoa

The Hokkien mee was watery, and had a chao ta and alkaline taste, with a bit of seafood flavour. I thought this was quite average, and had little of the prawn flavour and wok hei. The lady standing on the ladder stairs by the side taking orders was quite a sight though, and there was already a queue at opening.

Sumo Fried Hokkien Prawn Mee at Ang Mo Kio

An unexpected find, after finding that Song Heng Fishball Noodle was closed. The stall had a bit of a queue waiting for the new wok of Hokkien mee. The Hokkien mee was prawny, sticky and very flavourful – the stock was good. Even the chilli had a good hae bi fragrance. Prawns were fresh and sweet. Unexpectedly very nice.

Chef Goo Red Sea Prawns Fried Hokkien Mee at Alexandra Village

The prawns, while sweet, were a bit tough. The noodles were the sticky type, and the broth had a good seafood flavour, but the alkaline taste in the noodles overwhelmed the prawn broth flavour. A bit middling for me. 不会想念.

Liang Ji Fried Hokkien Prawn Mee at Geylang

Recommended by ieatishootipost, The Hokkien Mee was dry and alkaliney, and seemed to suffer from the lack of a strong seafoody broth. The texture was quite nice, given its lineage (son of the Golden Mile Hainan Hokkien Mee), but I thought the flavour could be improved, importantly since this was the dry variety of Hokkien Mee. No one eating here at all, just after lunch.

Neighbourwok – Hokkien Noodles at Bukit Batok

Not a bad Hokkien Mee by a new young hawker, attracting quite a good crowd for a stall in a quiet part of the estate. This tended towards the dry type of Hokkien Mee, with fairly good wok hei and flavour. I felt that the stock could be more robust and punchy in terms of flavour though, as the alkalinity of the noodles still came through, such that I stirred the mostly spicy less sweet chilli in.
