Yong Chun Wan Ton Noodle at Bukit Merah

The noodles were cooked in an interesting way – in a wok of boiling water or stock. The fragrance hit you once the noodles was served – very enticing. The noodles had a good eggy fragrance, and was tossed in an almost magical slightly sweet sauce with the fragrance of fresh crispy pork lard, and containing I think char siew sauce, garlic and fish sauce etc. This was seriously old school yet tasty.

The char siew, although not caramelised, was sweet and tender and complemented the noodles very well. The wantons were very generous, with savoury meat filling which was marinated with oyster sauce and I suspect dried sole fish, studded with some water chestnuts for the larger variety, and wrapped in silky smooth skin. Very good wanton noodles.

Second time lucky here; they were sold out the first time I came at 1pm, and they had a 8-person long queue this morning.
