King of Pao Fan at Bugis

There was really quite a long queue here, and again for good reason. The stock, which was the heart of the pao fan, was seafoody and crustaceany without being overly rich. It thus retained a light and refreshing taste, on top of the unmistakable fact that this was a seafood soup. The addition of the rice crispies and fried egg added texture, flavour and some richness, and the lobster was quite good – clearly fresh since the meat was fall off the shell, sweet and tasty, and bouncy and qq.
