Sin Cuisine Roasted Delights – Roast Meat at Ang Mo Kio

The noodles were neither too springy nor too soft (软硬适中), and were coated in a nice subtle savoury sauce spiked with pork lard and pork oil, and topped with salty minced pork like Hakka noodles. The char siu was only slightly fatty, although tender and caramelised with nice crispy black parts. I would have preferred some stickiness, and more fattiness though. I thought the sio bak was very good – tender, more fatty, and with a thick biscuit-like crispy crackling on top. Can skip the lava egg though, which was so so, and almost fully cooked.
