Char Siu Lang – Char Siew, Roast Meat & Hakka Noodles at ABC Brickworks

Recommended by 8 Days, with an interesting back story of a Toto winner turned hawker. Very nice bowl with just slight imperfections in each of the components. The Hakka noodles was very well flavoured with a balanced savoury and sweet minced pork and sauce, and fragrant and crispy pork lard. The noodles was a bit soft though. The char siew was tender and a good balance of lean and fatty, with the requisite sticky caramelisation. There was no hard crispy char though. The sio bak was similarly quite tender with a thick crispy crackling, although the crackling was a bit too hard, and required strong teeth to bite through.
