Chun Feng Man Mian – Wanton Noodles at Amoy Street

New stall recommended by SethLui.com. The noodles were good – springy, eggy, with a nice truffle fragrance, although the truffle fragrance went off after a while. I recommend rationing the caviar with the noodles – it added a nice briny touch.
The rest of the ingredient were ordinary though for a $9 bowl of wanton noodles – the char siew was tender and sweet but overly fatty and insufficiently caramelised, the wanton skin was thick and contained quite a small plain orb of meat filling, and the fried wanton was just the plain wanton fried. The cabbage was also insufficiently 入味.
