The gulf squid gnocchi, chive emulsion, dashi, ink tuille was quite straightforward – soft and pillowy with squid ink and chive emulsion, all mixed in dashi. Looked pretty and not mind-blowing in terms of taste. The Wagyu tri tip, roasted chestnut, pioppino mushrooms, kohlrabi was vey good though – fatty, unctuous, in a rich sticky glazy miso-like char siew sauce that was savoury and nutty with hints of red wine rather than sweet. Refined and tasty stuff.
