The barbeque stingray here had a distinctive sambal chilli, not too spicy, but redolent with the fragrance of hae bi hiam. The stingray was barbequed expertly- this was probably the first time I was tasting the crispy sides of the stingray, together with the tender flesh in the centre. The nice contrast in texture made me forget that I was essentially eating the soft bone/cartilage, which I usually didn’t eat.
