Madame Fan – Chinese at Beach Road

OCTOBER 25, 2020

Classy stuff, although a little bit stuffy. The food was not bad and refined; the turnip pastry was particularly interesting – moist and slightly crunchy inside, crispy and flaky outside. But some of the stuff were not really worth the price – a scallop siew mai that was $7 per piece, with what looked like half or a third of a scallop? Baos (unpictured) that seemed a bit substandard, with very average char siew, and solidified rather than molten liu sha. The stand alone char siew was sweet, somewhat caramelised and tender, but the curry soft shell crab offered just five small pieces of crab. I’m unsure about this.
