福来成 Hock Lai Seng – Minced Pork Noodles at Maxwell

This was apparently opened by a fourth generation hawker and grandson of Ah Ter. I loved the noodles, springy with a tangy savoury lardy mushroomy and thick ketchup flavour. The bowl had a nice and balanced flavour kick and came with sliced mushrooms and thick crispy lard. The ingredients were fresh and sweet, although standard fare, and came with a nice savoury sweet soup with generous minced meat. I will come back for the noodles with the traditional taste alone.
